摘要
谷氨酰胺转氨酶(Transglutaminase.EC2.3.2.13,TGase)是一种催化酰基转移反应的转移酶,它可使蛋白分子间和分子内产生共价联接,进而影响和改变蛋白质的功能特性,在食品、医药、化妆品、纺织等领域具有极广泛的应用。该文介绍了国内外关于TGase的研究情况及其在食品工业中的应用,提出了TGase所面临的主要问题,并对其前景进行了展望。
Transglutaminase can catalyzes an acyl transfer reaction and generates inter- and intra-moleular cross-links between proteions, TGase has many applications in food, medicine, cosmetic and textile industry. The research history and application of transglutaminase(TGase) in food industry were briefly introduced in this paper. The main problems were presented and the prospect was also described.
