摘要 本文介绍了以茶叶为主要配料,同时添加红枣、桂圆、枸杞等辅料制成保健茶饮料-八宝茶饮料的加工工艺。通过正交试验确定了合理的浸提条件和八宝茶饮料配方。结果表明:茶叶最佳浸提条件采用90℃浸提20min、1:60的茶水比例。八宝茶饮料的最佳配方为:茶叶5.0g/kg,红枣4.8g/kg,桂圆干4.8g/kg,枸杞2.9g/kg,葡萄干6.7g/kg,苹果干4.8g/kg,山楂干1.0g/kg,糖玫瑰2.0g/kg,冰糖30g/kg,抗坏血酸0.02%。 A kind of healthy eight-treasure tea was made using tea leaves as raw materials,with adding some other ingredients such as Chinese-date,longan,medlar,etc.Extraction conditions and the formula of the tea beverage were determined by orthogonal test.The results showed that the optimal extraction conditions were 90 ℃,20 min and tea-water ratio of 1:60.The optimal formula of eight-treasure tea beverage was as:5.0 g tea leave,4.8 g jujubes,4.8 g longans,2.9 g medlars,6.7 g raisins,4.8 g dried apples,1.0 g dried hawthorns,2.0 g sugar roses,30 g crystal sugar and 0.02% ascorbic acid in 1 kilogram beverage.
