摘要
本文阐述了食品营养强化的作用和要求,重点分析了营养强化食品中常用的强化方法及存在的主要问题,提出了微胶囊技术在营养强化食品中的应用构想。
Function and basic requirements of nutrition-intensified foods were introduced,the fortification methods and problems were analysed.The advantages of application of microencapsulation technique in fortification foods were presented and its application methods in fortification foods were put forward.
