摘要 研究不同氯化钠浓度下,培养液中亚硝酸盐的含量和乳酸菌菌体数量。通过相关性分析表明:氯化钠对乳酸菌降解亚硝酸盐有抑制作用;乳酸菌降解亚硝酸盐量与培养液中氯化钠含量有极显著的负相关;氯化钠并非单纯是通过抑制菌的生长从而影响乳酸菌对亚硝酸盐的降解。 The nitrite concentration and Lactobacillus biomass in fermentation broth containing different amount of NaCl were investigated. According to correlation analysis, it was indicated that NaCl could inhibit nitrite degradation by Lactobacillus, and there was significant negative correlation between the amount of decomposed nitrite and NaCl content in fermentation broth. To inhibit the growth of Lactobacillus was not the only reason to explain why NaCl affected the degradation of nitrite.
