摘要 为了提高青梅果皮色素的开发和利用价值,用丙酮为提取剂提取青梅果皮色素进行试验研究。以吸光度(275 nm)和色差值(L、a、b)作为考察指标,通过单因素试验(不同的丙酮体积分数、料液比、提取时间、提取温度)和L934正交试验,确定了青梅果皮色素的最佳提取工艺条件:以100%的丙酮为提取剂,料液比为1∶16,温度25℃,提取时间2.5 h。在此工艺参数下提取的青梅果皮色素呈黄绿色,其吸光度、色差均较为理想,是优良的天然色素。 In order to improve development and utilization values of pigment in sour plum pericarp,pigment in sour plum pericarp was extracted with acetone as extraction solvent.The extraction techniques of pigment in sour plum pericarp were optimized by single-factor test(different volume fractions of acetone,ratios of material to extraction solution,extraction times and temperatures) and L934 orthogonal test,taking absorbance value(275 nm)and aberration value(L,a,b) as indexes.The results showed that the optimal extraction conditions of pigment in sour plum pericarp were 100% acetone as extraction solution,ratio of material to extraction solution 1∶16,temperature 25 ℃,time 2.5 hours.Pigment extracted from sour plum pericarp was yellow-green,had perfect absorbance and aberration values,and was of excellent natural pigment under the conditions.
