摘要 辐照是重要的现代食品加工技术,但辐照食品的安全性一直是人们关注的问题。文中详细介绍了辐照食品化学性标志物(脂肪降解物、蛋白质降解物、自由基、DNA降解物)和物理性标志物(能量)及其检测技术。同时对辐照食品鉴别技术今后的研究进行了展望。 Irradiation is an important modern food processing technology. However, the safety of food irradiation has been concerned by consumers. Therefore, the study of food irradiation identification techniques is of great significance. Identification of irradiated foods is based on the characteristics of food-irradiation to the nature of the physical and chemical changes in measurements. This paper describes the irradiation of food chemical markers (e. g. fat degradation products, protein degradation products, free radical, DNA degradation products) and physical markers (e. g. energy) and its detection techniques. At the same time, the prospects of identification techniques for irradiated food were analyzed.
