Macroemulsions are thermodynamically instable systems.The part of this paper describes various phenomenon of macroemulsion instability,including creaming,flocculation,coalescence,breakdown,phase inversion and Ostwald ripening.Main factors determining stability are discussed in detail,for example,physical nature of interfacial film,electrical and steric barrier to coalescence,and stabilization by solid particles etc.
