摘要
通过乙醇溶剂法制备非晶颗粒态淀粉,再交联改性,制备非晶大颗粒交联淀粉,以交联度(溶胀法)为评价指标,采用正交试验设计优化条件,确定最佳工艺条件为:交联剂用量为淀粉干质量的1.5%、pH9.8、反应温度45℃、反应时间2 h;并对非晶交联淀粉的老化性、耐酸性、抗剪切性进行了研究。
Non-crystalline granular starch was prepared by ethanol solvent method and then modified by cross linking to prepare large non-crystalline and cross linked granular starch. Taking degree of cross linking (swelling method) as the evaluation indicator, the optimum technological conditions determined by orthogonal test were as following: dosage of cross linking agent was 1.5% of starch dry weight, pH 9.8, reaction temperature 45℃ and reaction time 2 tl. Meanwhile, the aging resistance, anti-acid and anti-shear properties of the non-crystalline and cross-linked granular starch were investigated.
