摘要
目的了解南宁市冷冻饮品的卫生质量,以便冷冻饮品生产加工销售各环节的监管部门更好地监督管理。方法对2002—2009年间随机抽检的冷冻饮品的检测结果进行分析。结果冷冻食品的总合格率(69.17%)较低;理化指标的合格率(84.95%)明显高于微生物指标(69.17%),影响冷冻饮品卫生质量的主要因素是微生物污染。结论食品安全监管部门要加强冷冻饮品的监督管理,提高冷冻饮品的安全质量。
[Objective] To understand the hygienic quality of frozen drinks in Nanning City,so that the supervision department can implement better supervision and management in each link,production,processing and sales of frozen drinks.[Methods]The frozen drinks were randomly sampled and tested during 2002-2009,and the results were analyzed.[Results]The total qualified rate of frozen drinks was relatively low(69.17%);the qualified rate of physicochemical indexes(84.95%) was higher than that of microbial index(69.17%),the major factor influencing hygienic quality of frozen drinks was microbial contamination.[Conclusion]Food safety supervision departments should strengthen the supervision and management in frozen drinks,then improve the safety quality of frozen drinks.
