鄱阳湖团头鲂肌肉营养分析 被引量:18

摘要 对鄱阳湖团头鲂肌肉的营养成份进行了分析测定,其结果为:鄱阳湖团头鲂肌肉中蛋白质含量19.36%,脂肪含量0.71%,水分含量78.64%,灰分1.13%,无氮浸出物0.16%。其中含氨基酸18种,总量139.69mg/g,7种是人体必需氨基酸,含量为57.9mg/g。同时含有大量微量元素,说明团头鲂是营养价值较高的鱼种。 The nutrient composition in muscle of M. amblycephala from Poyang Lake was analysed. The results showed that the components in muscle of wild M. amblycephala were moisture content (78.64%), protein (19.36%), fat (0.71%) and ash content (1.13%); The components in muscle of wild M. amblycephala which had been raised for some time were moisture content (78.89%), protein (16.49%), fat (3.63%) and ash content (0.89%). The muscle of this fish contained 18 kinds of amino acid and plenty of micro-element, total content of amino acid being 139.69mg/g; Among them 7 kinds of amino acid were essential to human body, its content being 57.9mg/g. Therefore M. ambly-cephala had higher nutritive value.
