摘要
在不同体积百分比浓度的蛋清蛋白溶液体系中,以CaCl2和碳酸钠为原料合成球形碳酸钙复合物,采用SEM、XRD、FT-IR和TG等测试技术对所得碳酸钙样品进行了表征,探讨了其形成机理。结果表明,在反应温度为40℃,氯化钙和碳酸钠0.2 mol/L和蛋清蛋白浓度为10%(V/V)条件下,合成出粒度为5μm左右的球形碳酸钙晶体,此晶体以方解石和球霰石混合晶型存在,有机质质量分数约为15%。与纯水体系形成的碳酸钙相比,热分解温度降低约15℃。红外V3蓝移约10 cm-1。蛋清蛋白与Ca2+配位及静电作用等是形成球形碳酸钙晶体的主要原因。
Spherical calcium carbonate compounds were synthesized in different volume percent concentrations of egg white protein solution system using CaCl2 and sodium carbonate as raw material.The formation mechanism of spherical calcium carbonate compounds was characterized by SEM,XRD,FT-IR and TG.The results indicate that when temperature is 40 ℃,calcium chloride and sodium carbonate is 0.2 mol/L,and the egg white protein is 10%(V/V),the CaCO3 crystal exsited as calcite and vaterite form which particle size is about 5 μm.The mass fraction of organic matter is 15 wt%.Compared with calcium carbonate,which is deposited in water system,thermal decomposition temperature fall down about 15 ℃,and the blue shift is about 10 cm^-1 in IR spectra.The formation of spherical calcium carbonate is mainly attributed to the coordination and electrostatic interaction between egg white protein and Ca^2+.
