摘要
食醋作为一种传统调味品,不仅营养成分丰富,还具有很好的药用价值,具有缓解疲劳、调节血糖及脂质代谢、抗氧化等功效。本文主要对醋的抗氧化活性成分和降血脂作用进行综述,对醋中主要功效成分进行了归纳,并展望了其在降血脂功能食品中的应用。
Vinegar was commonly used as a condiment of food.It was characterized by high nutritional contents and special pharmacological function. Research showed that vinegar had functions such as promoting recovery from fatigue, modulating blood glucose and lipid metabolism, antioxidation, etc. The antioxidant activity and hypolipidemic function of vinegar was reviewed,and the virtue components of vinegar were concluded.The future of vinegar used in the exploiture of hypolipidemic functional food was also viewed.
