摘要
从泸州老窖酒厂百年老窖泥中分离到1株产酸高的己酸菌株,经初步鉴定,该菌与克氏梭菌(Clostridium Kluyverii)的特性不很相同。经对该菌株产酸条件研究,其最适生长温度为35℃,最适pH为7.0~7.5,乙醇和乙酸钠是该菌生长和产酸的主要基质,最高产酸量达500 mg/mL,活菌数达5亿个/mL以上。
A caproic acid bacteria strain of high-yield of acid was isolated from century-old pit mud in Luzhou Laojiao Distillery.Such strain was quite different from Clostridium Kluyverii in biological properties through preliminary identification.The research on its acid-producing condi-tions was summarized as follows: the optimum growth temperature was at 35 ℃,the optimum pH value was about 7.0~7.5,ethanol and sodium acetate were the main mediums for its growth and acid-producing,the highest acid-producing level was 500 mg/mL,and living bacteria number was above 0.5 billion/mL.
