摘要
本文主要介绍了红曲霉发酵产物在抑制胆固醇合成、降低血压、抗疲劳等方面的保健功能;并对国内外红曲霉的开发利用情况以及存在的桔霉素问题进行了综述。
The Monascus fermentation preducts can inhibit the yield of cholesterol, lower the blood pressure, relieve fatigue,and so on. In the course of fermentation,some of the Monascus species may produce citrinin, a fungi toxin. The use of Monascus has been very much developed. This articls mainly discssed above - mentioned three aspects.
