摘要
目的了解吴江市公办小学和民工子弟小学的午餐营养素摄入状况。方法采用称量、记录相结合的方法对吴江市18所公办和民工子弟小学的午餐膳食营养素进行分析。结果公办小学午餐中维生素A仅占建议标准的32%;民工子弟小学午餐除热量和维生素C,其余均严重低于标准;公办小学午餐中蛋白质所占能量比为26%,超过标准;民工子弟小学午餐中蛋白质和脂肪来源能量分别为11%和12%,明显低于建议标准。公办小学和民工子弟小学午餐中动物食品所提供的钙、铁偏低。结论建议学校增加动物肝脏、动物全血等的供应来提供维生素A和吸收率高的铁。民工子弟小学学生多饮用牛奶,并且在学校午餐中增加价格相对便宜而营养价值较高的豆制品供应。政府部门应加强学生午餐营养方面的引导,加大资金投入。
[Objective]To understand the lunch nutritional status of students in the public elementary schools and elementary schools for children of migrant workers.[Methods]Nutrients in lunch for 18 elementary schools in Wujiang City were analyzed by using weighing and record methods.[Results]Vitamin A supply in the public elementary schools was 32% of recommendation.Except for energy and vitamin C,other nutrients provided by the elementary schools for children of migrant workers were seriously less than recommendation.Protein-caloric ratio(26%) was higher in the public elementary schools.While protein-caloric ratio(11%) and fat-caloric ratio(12%) was lower than recommendation in the elementary schools for children of migrant workers.Calcium and iron from animal food were inadequate in both 2 kinds of schools.[Conclusion]Animal liver and blood rich in Vitamin A and iron are recommended in student lunch.The students in elementary schools for children of migrant workers should drink more milk and increase soy products which are relatively cheap and have high nutritional value.The government departments should strengthen the guidance of lunch nutrition and increase financial input.
