摘要
概述了国内外电分析技术在食品痕量重金属元素检测中的现状,着重阐述了离子选择电极法、极谱分析法、溶出伏安法及电位溶出法等用于食品安全检测的特点,并对电分析法在食品金属形态分析方面的应用状况进行了评述。今后研究的重点应放在提高方法的选择性,改善测定结果的重现性,发展金属形态分析的原位、实时分析技术以及进一步研究金属元素的形态与毒性的关系。
The paper reviewed about the progress in the detection of trace heavy metals in food with electroanalysis.The properties of ion-selective electrodes method,polarography,stripping voltammetry and potential stripping analysis were mainly discussed for the food safety.The application situation of electroanalytical techniques on the metal's states was also expressed in this thesis.In the future,the research will focus on improving the selectivity of method and the reproducibility of results,developing the situ and real-time analysis of metal's states,and researching the relationship between the form and its toxicity.
