摘要
无机砷的毒性远大于有机砷,而无机砷的毒性又因价态的不同而不同,As3+比As5+毒性强,因而食品中无机砷的价态分析在监测食品的安全性中有着重要的作用。选取市场上人们常食用的四种水产食品,利用氢化物发生原子荧光光度法分析测定As3+和As5+的含量。其最低检出限为0.006mg/kg,相对标准偏差在1.81%~2.66%之间,加标回收率在95%~105%之间,所测样品中总无机砷含量在0.065mg/kg~0.081mg/kg之间。其中,As3+含量在0.039mg/kg~0.048 mg/kg之间,As5+含量在0.026mg/kg~0.033mg/kg之间,As3+含量略高于As5+含量。该方法有较好的精密度和准确性,适用于食品中不同价态砷的测定分析。
Compared to the organic arsenic,the toxicity of inorganic arsenic is far greater in food which shows difference according to the arsenic valence state,such as As3+and As5+.So the valence state analysis of inorganic arsenic in food plays an important role in monitoring the food safety.Four aquatic organisms on markets were selected to determine the As3+and As5+ content using atomic fluorescence spectrometry.The detection limit of the method is 0.006mg/kg,the value of RSD was between 1.81% and 2.66%,and the value of recovery rate is between 95% and 105%.The total inorganic arsenic content is between 0.065mg/kg and 0.081mg/kg.The level of As3+ content(0.039mg/kg^0.048mg/kg) was slightly higer than As5+ content(0.026mg/kg^0.033mg/kg).The results showed good precision and accuracy for measurement and analysis of different arsenic valence state in foods.
