摘要
目的了解邯郸县餐饮具集中消毒服务机构的现状和集中消毒餐饮具的卫生状况。方法依据国家有关卫生规范、卫生标准和检验方法,进行监督检查和现场采样送检。结果监督检查7家餐饮具消毒服务单位,在生产场所布局、卫生设施、产品质量控制、包装标注标识和人员健康检查等方面都存在严重的违规现象,从业者法律意识淡薄,卫生知识匮乏;采样检测消毒餐具合格率为56%(42/75)。结论邯郸县餐饮具集中消毒服务机构亟待加强卫生监管力度,规范企业生产行为;加强培训,强化经营者责任意识;加大宣传力度,发挥舆论导向和社会监督的作用。
[ Objective ] To understand the present situation of service institutions for concentrated tableware disinfection and the sanitary condition of tableware with concentrated disinfection. [ Methods ] According to relevant national health criterions, hygiene stand- ards and inspection methods, supervision, inspection, and field sampling were conducted. [ Results ] 7 service institutions for tableware disinfection were inspected, and there existed serious violations in respects of production place layout, health facilities, product quality control, packaging label and health examination of workers. The practitioners lacked law consciousness and health knowledge. Sampling inspection showed that the qualified rate of disinfection tableware was 56% (42/75 ). [ Conclusion] The hygiene supervision should be strengthened in service institutions for concentrated tableware disinfection in Handan, and production behavior of enterprises should be standardized. It is necessary to strengthen training and responsibility consciousness of managers. The propaganda should be enhanced, and should play key role in guidance of public opinion and social supervision.
