福建省居民食盐摄入量的调查分析 被引量:13

Investigation and analysis on the salt intake of residents in Fujian Province

摘要 目的了解福建省居民食盐摄入水平,为因地制宜调整碘盐浓度提供依据。方法采用分层随机抽样法选择沿海农村、沿海城市、内陆农村、内陆城市的213户居民,用3日称量法对每户居民平均日食盐摄入量入户进行调查。分别应用平均每标准人日食盐摄入量和3日称量法平均日食盐摄入量简略计算方法对居民平均日食盐摄入量进行计算。结果福建省居民平均每标准人日食盐摄入量为7.63 g,其中沿海农村为7.26 g、沿海城市为5.35 g、内陆农村为10.75 g、内陆城市为6.60 g,农村高于城市(P=0.000),内陆高于沿海(P=0.000),以内陆农村最高。用平均每标准人日食盐摄入量和3日称量法平均日食盐摄入量简略计算方法两种计算方法计算居民平均日食盐摄入量差异没有统计学意义(P>0.05)。结论我省居民平均每标准人日食盐摄入量总体水平高于中国居民膳食指南的推荐量(6 g),应加强健康教育;食盐中加碘的量要充分考虑不同地区之间人群食盐摄入量差异的因素;3日称量法平均日食盐摄入量简略计算居民食盐摄入量方法简便,可应用于大规模流行病学调查。 Objective To investigate the salt intake of residents in Fujian Province,and provide evidence for the adjustment of iodized salt concentration of local conditions.Methods Two hundred and thirteen residents were selected from coastal rural areas,coastal cities,inland rural areas and inland cities through a stratified randomized sampling.The household salt intakes were collected by 3 days weighting method.The average daily salt intake of residents was calculated using calculation methods of the average daily salt intake of reference man and brief.Results The average salt intake per reference man per day in Fujian Province was 7.63 g,coastal rural areas was 7.26 g,coastal city was 5.35 g,inland rural areas was 10.75 g,inland cities was 6.60 g,the urban residents significantly lower than the suburban residents(P=0.000),while the inland residents significantly higher than the coastal residents(P=0.000),and the inland rural areas the highest.There was no significant difference in average daily salt intake between the two calculation methods.Conclusion The overall level of the average salt intake per reference man per day of Fujian residents is higher than the Dietary Guidelines for Chinese(6 g),health education should be strengthened;The amount of salt iodization should fully consider the factor of difference of salt intake among different areas;3 days weighting method and brief calculation method on the average daily salt intake is simple and can be applied to large-scale epidemiological survey.
