山蕗菜营养和功能成分的初步分析研究 被引量:4

摘要 本文对山蕗菜不同部位的主要营养成分及功能特性进行研究,为该资源的保护和合理开发利用提供依据。结果表明山蕗菜茎膳食纤维含量高达30.9%,灰分含量高达12.1%,富含人体易缺少的Ca,Mg,Fe等矿物质元素以及多种必需氨基酸。山蕗菜根多糖含量高达30.4%,黄酮含量高达2.0%,精氨酸、天门冬氨酸、谷氨酸等药物氨基酸含量丰富。山蕗菜叶中黄酮、粗蛋白、粗纤维以及碳水化合物含量均较高,分别达3.5%、20.3%、35.1%、21.25%,且其矿物质含量丰富,总量达97812.92μg.g-1。山蕗菜中营养和功能成分较为丰富,可进行深入开发。 In order to provide theoretical support for species protection and rational application of Petasites palmata A.Gray,this article has studied the major nutritional and functional components of the different parts of Petasites palmata A.Gray.The results showed that the contents of fibre and ash in the stalk of Petasites palmata A.Gray were rich,which reached 30.9% and 12.1% respectively.There are also many kinds of mineral elements and essential amino acid in the stalk.The roots of Petasites palmata A.Gray have plenty of medicinal amino acid such as arginine,aspartic acid and glutamic acid.The contents of polysaccharide and flavonoids can reach 30.4% and 2.0% respectively.In the leaves,there are lots of flavonoids,crude protein,fibre and carbohydrate,which are 3.5%、20.3%、35.1%、21.25%,respectively.And the mineral elements are rich in the leaves,the total content reached 97812.92 μg·g-1.There were rich nutritional and functional components in Petasites palmata A.Gray.And further researches should be carried out.
