摘要
对池养月鳢〔Channaasiatica(Linnaeus)〕肌肉生化成分进行了测定。结果表明,月鳢肌肉(鲜样)中粗蛋白质含量18.87%,粗脂肪3.62%,粗灰分1.03%,水分75.56%。干物质中水解氨基酸总量76.13%,其中必需氨基酸含量28.23%,占氨基酸总量的37.08%;游离氨基酸总量1217.3mg/100g;钙0.42%,磷0.86%,钙磷比例为1∶2.05,钙含量比鲤鱼等一些常规养殖鱼类高0.7~2.8倍。认为月鳢是一种营养价值和养殖价值都比较高的淡水养殖品种,具有良好的开发利用前景。
The experiment was conducted to analyse the biochemical components of muscles sampled from pond cultured Channa asiatica (Linnaeus). The results showed that the contents of crude protein, crude fat, ash and moisture of the fresh muscles were 18 87%, 3 62%, 1 03% and 75 56% respectively. On the basis of dry matter of the muscles, the amount of hydrolytic amino acids was 76 13%,in which the content of essential amino acids was 28 23%, making up 37 08% of the total amino acids. The content of total free amino acids was 1 217 3 mg/100 g, and calcium and phosphorus were 0 42% and 0 86% respectively. The ratio of calcium to phosphorus was 1∶2 05, and the content of calcium was 0 7 to 2 8 fold higher than conventional fishes, such as Cyprinus carpio (Linnaeus), Hypophthalmichthys molitrix (Cuvier et Valenciennes), Mylopharyngodon piceus (Richardson) and so on. In conclusion, Channa asiatica (Linnaeus) is one of freshwater fishes with better nutritive value and raising value, deserving of exploitation and utilization.
