提高采后葡萄中白藜芦醇含量的方法简介 被引量:2

摘要 白藜芦醇是葡萄中重要的活性成分之一,对人类健康有诸多积极作用,主要在葡萄生长期间合成且含量较低。研究表明,通过紫外线照射、短期缺氧和水杨酸处理等方法,可以提高采后葡萄中白藜芦醇的含量,为提高葡萄加工品中白藜芦醇含量提供了新方法。本文综述了目前在提高采后葡萄白藜芦醇含量方面的研究结果以及可用的方法与技术。
