摘要
为了寻求一种保健酒澄清的最佳方法。试验分别应用ZTC-III天然澄清剂和膜分离技术处理淫羊藿保健酒,同时测定处理前后酒中黄酮、多糖含量以及酒的色度、透光率、pH值等指标。处理后的淫羊藿酒稳定性明显提高,放置一段时间后仍具有较高澄清度,透光率在90%以上。同时黄酮、多糖等主要成分损失很小,澄清剂和膜处理后黄酮保留率分别为,92.97%、93.19%;多糖保留率分别为,61.29%、94.19%。通过比较应用膜技术澄清淫羊藿保健酒不仅可以改善澄清度,同时保留了多糖、黄酮等有效成分,更适用于淫羊藿保健酒的澄清,在保健酒澄清方面具有广阔应用前景。
Natural clarifier ZTC-III and membrane ultra filtration were applied for clarification of Epimedium healthy wine. Effects of treatments on color degree, transmittance, pH value, contents of polysaccharides and flavonoids were studied. Stability of clarified healthy wine improved significantly, and transmittance of wine could kept at 90% after a period of storage. Content retention rate of polysaccharide and flavonoids were 61.29% and 92.97% when treated with ZTC-III clarifier and 94.19%, 93.19% when treated with ultra filtration, respectively. Compared two methods, membrane ultra filtration was more suitable for clarification of Epimedium healthy wine since more polysaccharide and flavonoids were remained in products and it has broad prospects in healthy wine clarification.
