甜味觉受体及信号转导研究进展 被引量:1

摘要 溶液中的甜味剂作用于味觉细胞相关受体分子,产生甜味觉信号,刺激相关神经中枢,使机体感受到甜味剂的存在。通过识别甜味剂,可以帮助人类找到提供能量的物质。甜味觉也能满足食欲,取得愉悦,过度食用甜味剂可导致肥胖,影响人体健康。了解甜味剂引起甜味觉的机理,寻找能够激发甜味觉低能量物质,对保护人体健康有重要意义。
