摘要
通过供试双孢菇品种(冀168、As2796、夏秀2000、F-56、U3、176)在失水率、褐变度等方面的对比试验,探讨了品种对双孢蘑菇采后贮藏性的影响。结果表明,随着贮藏温度的升高,双孢蘑菇的失水率显著增大,冀168的失水率变化幅度最小,176的失水率变化最大;在氧气浓度为4%,二氧化碳浓度为10%的条件下,冀168的失水率和褐变度也最低,其贮藏性能显著优于供试菌株。
Effect of different strains on storage performance in Agaricus bisporus through comparing water loss rate and browning degree between the tested strains(Ji168、As2796、XiaXiu2000、F-56、U3、176) was studied in this paper.The results showed that,as the storage temperature increased,Water loss rate(WLR) of Agaricus bisporus significantly increased,which the WLR range of Agaricus bisporus 'Ji 168' was smallest and that of 176 was largest among tested strains,at the condition with oxygen concentration of 4%and concentration carbon dioxide of 10%,the storage performance of Ji 168 was significantly superior to that of tested strains.
