摘要
细菌素是细菌产生的一种有抑制作用的杀菌蛋白或多肽物质。大部分细菌素只对有近缘关系的细菌有抑制作用,具有无毒、无副作用、无残留、无抗药性,对环境无污染等优点。笔者阐述了乳酸菌产细菌素近20年来的研究进展,对乳酸菌细菌素在工业上的应用前景提出了展望。
Bacteriocins are germicidal proteins or polypeptide materials with inhibiting effect what generated by bacteria.Most of bacteriocins only have inhibitory effect on relatives of bacteria,and it has the advantages of non-toxic,without side effect,residue-free and no-drug resistance as well as no pollution to environment and so on.In this paper,the research progress on bacteriocin-producing lactic acid bacteria in recent 20 years were summarized,moreover,the application future of bacteriocin-producing lactic acid bacteria in industry was predicted.
