摘要
选择粮食中玉米脂肪酸值为品质劣变指标,分析其在储藏过程中的变化趋势与控制。通过对延安直属库玉米储存过程中脂肪酸值变化趋势分析,对不同水分、不同储存环境的玉米脂肪酸值进行测定,分析玉米水分、储存环境条件因素对玉米脂肪酸值的影响,研究结果表明:玉米随着储存期的延长,显现不可逆转的劣变,玉米水分越大在储存中脂肪酸值增加越快,环境温度变化大玉米脂肪酸值升高快,环境气密性好玉米脂肪酸值相对变化较小。同时,根据延安直属库实际应用,提出机械通风技术、粮面压盖、就仓(垛)干燥、膜下环流等技术对控制这些因素、延缓玉米品质劣变具有积极的作用。
Maize fatty acid value was chosen as an deterioration index,it analyzed the change trend of stored maize quality and its control.By analyzing the change trend of maize fatty acid value of stored maize,fatty acid value of maize in different moisture and storage environment was determined,the effect of maize moisture and storage environment on fatty acid value ruas analysed,the experiment results showed that maize appeared an irreversible deterioration with its storage time extending,fatty acid value increased faster with more maize moisture content and environment temperature increasing,vice versa while better airtightness.Based on the application in Yanan grain storage,it brought forward that there were positive effects of the grain storage technology including mechanical ventilation technology,covering up grain bulks surface,in-store drying and recirculation fumigation under film and so on on postponing maize quality aging.
