摘要
介绍大豆的营养价值,概述大豆加工利用现状和大豆加工研究进展,分析我国大豆加工利用中存在的问题,有针对性地提出促进大豆深加工利用的途径,展望我国大豆加工利用产业的发展前景。
This article deals with the nutritional value of soybeans and the present state of its processing and utilization in China. The existent problems are analyzed and appropriate approaches are put forward so as to promote the intensive processing of soybeans and its development prospect is addressed as well.
