摘要
目的探讨三斑海马液化蛋白液的抗氧化活性。方法酶法提取工艺采用了4组单因素实验、16组正交试验进行优化,以对DPPH自由基的清除率来衡量三斑海马液化蛋白的抗氧化活性。结果三斑海马在料液比1:10、反应时间6h、酶用量1%时液化蛋白水解率最高,提取物对DPPH自由基的抗氧化活性最强。结论初步探明三斑海马液化蛋白的提取方法及水解液对DPPH的抗氧化活性,为开发海马提供理论基础。
Aim To observe the antioxidant activites of liquefied protein of three-spot hippocampus.Methods Four groups of single factor experiment and 16 groups of orthogonal experiment were carried out for optimization of the experiment and the antioxidant activity of liquefied protein of three-spot hippocampus was determined based on the scavenging rate of DPPH radical.Results The liquefied protein hydrolysis and the scavenging rate of DPPH radical were the highest with solid-liquid ratio of 1:10,reaction time 6h,l%enzyme dosage,the antioxidant activity of extract of DPPH radical was also the highest.Conclusion Liquified protein of hippocampus was successfully extracted and the antioxidant activity of hydrolytic solution to DPPH radical was determined to have provided theorectical basis for utilization of hippocampus.
