摘要
冬季在培养房内制作人工窖泥,可保证窖泥培养温度达到己酸菌生长繁殖所需的最适环境,解决了窖泥不能在冬季培养的问题,拓宽了北方地区生产浓香型优质白酒的思路。实践证明,此法培养的人工窖泥应用效果明显,可使新窖老熟提前1~2排,有效保证优质窖泥的生产和应用,为生产浓香型优质白酒打下良好的基础。
Indoor culture of manmade pit mud in winter could ensure the optimum temperature for the growth and the reproduction of clostridium caproicum.It has settled the problem of difficult culture of pit mud in winter and it has provided a successful approach for producing quality Luzhou-flavor liquor in north China in winter.The production practice proved that the produced pit mud could advance the aging of new pits ahead of 1-2 production turns and the use of such pit mud could lay solid foundation for the production of quality Luzhou-flavor liquor.
