摘要
对青海天峻、甘肃天祝、甘南玛曲3个地区共计90份牦牛乳样品进行了系统的营养成分测定及分析.结果表明:3个地区的牦牛乳脂肪含量变化存在显著性差异(P<0.05)或极显著性差异(P<0.01);全脂固体、非乳脂固体、乳糖、冰点、密度、酸度无显著性差异(P>0.05);随着海拔的依次增高,天祝、玛曲及天峻牦牛乳脂肪及蛋白含量明显增加,全脂固体、非乳脂固体、乳糖、冰点、密度、酸度无明显变化;胎次对牦牛乳理化指标影响不大.
The nutrient components of ninety samples of yak milk collected from Tianzhu and Maqu of Gansu Province and Tianjun of Qinghai Province were determined and analyzed.The results showed that the fat of yak milk were significant different among three regions,while no significant differences were found in TS,Snf,lactose,density,FPD and acid.With the increasing of the altitude,the fat and protein of the yak milk from three regions were both increased obviously,but the other indexes showed no obvious changes.In addition,birthrank had no obvious influence on yak milk nutrient components.
