摘要
果糖是果实风味品质的重要组分,通过遗传育种或栽培技术措施均可影响果糖的积累,进而影响果实风味品质。笔者对果实果糖的含量与变化、内部酶控调节、外源技术措施影响以及分析测定方法进行了较全面的综述,提出了分析测试果实果糖的果实品质评价方法。
Fructose was an important component of the fruit flavor quality.Genetic breeding or technical measures could affect the accumulation of fructose and the fruit flavor.The fructose content and change,the control and regulation of internal enzyme,the technical measures and the determination method of fructose were summarized.The fruit quality evaluation through the fructose determination was proposed.
