摘要
目的研究儿童膳食中脂肪和脂肪酸的食物来源分布,为儿童肥胖及其慢性病的预防提供资料。方法共有6 826名7-17岁被调查者完成膳食调查。通过连续3 d 24 h回顾法记录食物数据及称重法记录家庭调味品消费量数据,获得平均每人每日各种食物的摄入量。根据食物成分表计算平均每人每日膳食中脂肪和脂肪酸的摄入量。结果每天儿童膳食脂肪摄入量平均为67.4 g,饱和脂肪酸、单不饱和脂肪酸和多不饱和脂肪酸摄入量分别为16.4,26.5和16.4 g,比例为1.0∶1.6∶1.0。饱和脂肪酸的主要食物来源为肉类,占35.4%;其次为植物油和动物油,各占24.4%和21.3%。单不饱和脂肪酸的主要食物来源是植物油,占43.8%。结论儿童肥胖及高血压、糖尿病等慢性疾病的增加与饱和脂肪酸的过多摄入有关,肉类是饱和脂肪酸的主要食物来源,应该适当控制。
Objective To study children's dietary fat and fatty acids source of food distribution,and to provide information for childhood obesity and chronic disease prevention.Methods A total of 6 826 children aged 7-17 years old were asked to complete the dietary survey.Through record 24-hour food consumptions for 3 consecutive days and weighing record data on household consumption of spices to obtain an average daily intake of various foods.According to the Food Composition Table the average per person per day dietary intake of fat and fatty acids were calculated.Results Children's dietary fat intake was averagely 67.4g/d.Saturated fatty acids,monounsaturated fatty acids and polyunsaturated fatty acids intake respectively 16.4g/d,26.5g/d and 16.4g/d,the proportion was 1.0∶1.6∶1.0.Saturated fatty acids,the main food sources of meat,accounting for 35.4%,followed by vegetable(24.4%) and animal oils(21.3%);monounsaturated fatty acids,the main food sources of vegetable oil,accounting for 43.8%.Conclusion It should be properly controlled that childhood obesity and high blood pressure,diabetes and other chronic diseases increase in the excessive intake of saturated fatty acids related to meat is the main food sources of saturated fatty acids.
