摘要
论述了添加剂在面条工业化加工中应用的种类、原理和功效,对使用中应该注意的问题也提出了见解。
The variety,mechanism and effect of additives application in noodles industrialization proxessing are outlined in the paper.When additives are used,some new ideas are put forward in accordance with problems needing attention.
