用紫外-可见分光光度法测定羰基值,采用摩尔吸收系数计算,测定溶液最终体积应参与计算。供试品羰基值的含义应完整表述为:羰基值系指按紫外-可见分光光度法测定,液层厚度为1cm时,每1kg油脂中含羰基化合物的毫摩尔数。
