摘要
通过单因素实验和正交实验初步优化了蛋白酶产生菌LN02发酵玉米黄粉蛋白的条件。结果表明,菌株LN02发酵玉米黄粉蛋白的最佳条件为:初始pH值5.5、装液量60 mL/250 mL三角瓶、发酵温度35℃、发酵时间5 d。
Through single factor experiment and orthogonal experiment,the fermentation conditions of corn gluten protein by protease producing strain LN02 were optimized.The results indicated that the optimum fermentation conditions were as follows:the initial pH value was 5.5,the amount of broth in flask was 60 mL/250 mL,the fermentation temperature was 35 ℃,and the fermentation time was 5 d.
