摘要
[目的]确定黄金梨果肉硬化症发生的关键时期。[方法]以黄金梨为材料,研究了黄金梨果实果肩部和果顶部细胞壁组分及其降解酶活性的变化。[结果]随着黄金梨果实的生长发育,果实纵、横径逐渐增大,果实生长曲线呈单"S"型;果肩和果顶部细胞壁组分及其降解酶活性的变化趋势相似,纤维素和原果胶含量逐渐下降,可溶性果胶含量逐渐上升;纤维素酶(Cx)活性逐渐增高,果胶甲酯酶(PME)活性逐渐下降,多聚半乳糖醛酸酶(PG)活性先上升后下降;果肩和果顶的可溶性果胶含量CX、PME和PG活性在果实膨大期发生转折,果实膨大期是黄金梨果肉硬化症发生的关键时期;纤维素和Cx可能在果肉硬化中起着关键作用。[结论]该研究为果肉硬化症的防治提供了理论依据。
[Objective] The aim was to study the critical period of hard-end disorder occurrence of Whangkeumbae.[Method] Using Whangkeumbae as material,the change of cell wall components and its digestive enzyme activities in fruit shoulder and top was studied.[Result] With the growth and development of Whangkeumbae fruit,the vertical and horizontal diameter of fruit increased gradually,and showing single "S" type;the changes of cell wall components and its digestive enzyme activities in fruit shoulder and top were similar,namely cellulose and protopectin content reduced gradually,while soluble pectin content rose step by step;cellulose(Cx) activity improved gradually,while pectinesterase(PME) activity decreased gradually,and polygalacturonase(PG) activity went up firstly and then went down;soluble pectin content,Cx,PME and PG activity had a twist in fruit swelling period which was the critical period of hard-end disorder occurrence of Whangkeumbae;cellulose and Cx might play important roles in hard-end disorder.[Conclusion] The study could provide theoretical foundation for the control of pulp sclerosis.
