摘要
将蚕蛹通过粉碎和丙酮脱脂后,得到蚕蛹蛋白粉。用碱性蛋白酶、中性蛋白酶、胃蛋白酶、木瓜蛋白酶、胰蛋白酶酶解蚕蛹蛋白粉,以DPPH清除能力为指标对酶解过程进行分析,结果表明胃蛋白酶对蚕蛹蛋白有较好的酶解效果。然后通过正交优化胃蛋白酶的酶解条件,并研究水解产物多肽的体外抗氧化活性。
Silkworm pupa was crushed and defatted by acetone,giving silkworm pupa powder.Then the powder was hydrolyzed with five proteases(Alkali protease,neutral protease,pepsin,papain,trypsin).Among the tested enzymes,pepsin was confirmed as an optimal enzyme preparation to prepare silkworm pupa polypeptide in terms of DPPH.scavenging activity of hydrolysates.The enzymatic hydrolysis procedure was optimized using orthogonal array method and the corresponding product was subjected to further analysis of antioxidant activity,such as reducing power and O2.,.OH and DPPH.scavenging activities.
