摘要
分别采用紫外线和亚硝酸对红曲霉进行诱变,获得一株比出发菌株生长速度快、产色量高的突变株,并对其发酵条件进行了研究。研究结果表明,突变株2.5 d即长出直径为1 cm左右的菌落,发酵色价达到12.32 U/mL,稳定性好;其最佳发酵条件为:转速160 r/min,pH值6,温度32℃,碳源麦芽糖,氮源牛肉膏。
The Monascus purpureus Went.was induced by using ultraviolet radiation and nitrous acid,respectively.Then,a mutant strain,which has quicker growth speed and higher pigment production amount than original strain,was obtained,and its fermentation conditions were studied.The results showed that the mutant strain grew a colony with diameter around 1 cm at 2.5 d,had fermentation pigment value of 12.32 U/mL and good stability;its optimum fermentation conditions were as follows: rotational speed was 160 r/min,pH value was 6,temperature was 32℃,carbon source was maltose and N source was beef extract.
