摘要
介绍在食品加工中如何利用HACCP质量控制体系应对当前食品安全危机.以猪肉分割工艺过程为例,通过对加工流程中可能产生的危害进行分析(HA),找出控制的关键点(CCP),并制定相应的解决措施,确保猪肉分割过程的安全性和猪肉的品质.
This article introduced how to cope with the current food safety crisis,using the HACCP quality control system.Taking the pork segmentation process for example,it made a potential hazard analysis(HA) in the processing flow,found out the critical control point(CCP),and established countermeasures,which ensured the safety of pork segmentation and pork quality.
