摘要
对洋河大曲3种大曲浸提液主体微生物区系进行研究。结果表明,洋河大曲中的细菌种类最为丰富,共分离到15株,其中芽孢杆菌属6株;霉菌12株,其中,曲霉属6株,该种类较丰富,但其在数量上并不具优势;分离到酵母菌8株,其中,毕赤酵母属3株,其数量占酵母菌总数的80%左右;洋河大曲与传统浓香型大曲中的主体微生物菌系之间存在一定的差异性。
Three kinds of extract solution of Yanghe Daqu were selected to investigate their main microflora. The results showed that there were rich bacterial species (15 strains isolated including 6 Bacillus strains), there isolated 12 mildew strains including 6 Aspergillus strains but their quantity was not predominant, and there isolated 8 yeast strains including 3 P/ch/a strains (their quantity accounted for 80 % of total yeast quantity). As a result from the above studies, it was found that the difference of main microflora between Yanghe Daqu and traditional Luzhou-flavor Daqu-was evident.
