摘要
对柴达木野生黑果枸杞果实中的主要营养成分进行了分析,结果表明,黑果枸杞鲜果含水质量分数85.03%,其干果蛋白质量分数10.61%,脂肪6.66%,多糖4.28%,总黄酮质量分数4.29%,原花青素3.42%。果实含有γ-VE及δ-VE,每百克分别为0.0075和0.016 mg,从黑果枸杞籽中提取的枸杞籽油维生素E含量较果实要高的多,籽油富含α-VE、γ-VE及δ-VE,每百克分别为0.1906 mg、1.8939 mg和0.045 mg。黑果枸杞中氨基酸种类相对较丰富,亮氨酸、蛋氨酸、苯丙氨酸、异亮氨酸等含量相对较高。黑果枸杞中矿质元素丰富,其中钾的含量最高,且远高于钠的含量,属于高钾低钠的食品。
The main nutrient contents of Lycium ruthenicum from Qaidam Basin were analyzed.The results indicated that the content of water in fresh fruit was 85.03%,and the contents of protein,fat,polysaccharide,flavonoids,and oligomeric proantho cyanidins were 10.61%,6.66%,4.28%,4.29% and 3.42%,respectively.The fruit contained γ-VE andδ-VE,and the contents were 0.0075 and 0.016mg·100g-1,respectively.The vitamin E of oil from Lycium ruthenicum was also analyzed.The result indicated that the oil was rich in α-VE,γ-VE andδ-VE,the contents of which were 0.1906,1.8939 and 0.045mg·100g-1,respectively.Lycium ruthenicum was rich in amino acids,and leucine,methionine,isoleucine and phenylalanine were at a comparatively higher level.In mineral elements,the content of K was higher than Na.
