摘要
通过目前规模化生产甜玉米饮料较少的现象,针对甜玉米饮品生产中存在的原料利用率低的问题,以果蔬物料湿法超细粉碎技术为基础,提出了全玉米饮品开发的关键技术——高速切割。通过对高速切割设备的粉碎机理和重要参数的介绍,以及甜玉米粉碎实验的研究,为甜玉米饮品的开发及产业化生产提供理论和实验上的指导,为采用剪切粉碎法生产甜玉米饮品的可行性提供了参考依据。
Focusing on lack of scale production of sweet corn beverage with low availability of raw material, the paper put forward the key technology of whole corn beverage based on fruit-vegetable material wet method superfine grinding technique high-shear. The mechanism and structural parameters of high-shear equipment were introduced and the research on the grinding experiment of sweet corn, which provide theory and experimental guide for sweet corn beverage development and industrialization production, thus also provide reference for the feasibility of sweet corn beverage production with shear grinding method.
