摘要
以雪茄芯叶为材料,在单一蛋白酶处理的基础上,采用正交试验进行组合蛋白酶处理,研究蛋白酶处理对雪茄芯叶蛋白质含量和芯叶品质的影响.结果表明:单一蛋白酶处理时,中性蛋白酶和碱性蛋白酶效果较好,芯叶蛋白质含量分别降低18.98%和17.54%;组合蛋白酶处理时,最佳发酵条件为雪茄芯叶用组合蛋白酶(中性蛋白酶120U/g烟叶+碱性蛋白酶4×10-4 AU/g烟叶)于45℃、85%湿度下处理8h.经组合蛋白酶处理后,芯叶蛋白质含量降低25.38%,化学成分更加协调,感官品质得到提高.
On the foundation of single protease treatments of cigar filler tobacco,an orthogonal experiment was conducted,in which the effects of mixed-protease treatment and other three factors on protein content of cigar filler tobacco and its inner quality were studied.The results indicated that of the single protease treatments,neutral protease and alkaline protease had better effects,with a protein degradation percentage of 18.98% and 17.54%,respectively,and that in the orthogonal experiment,the optimum parameters were: mixed-protease(neutral protease 120 U/g leaf+alkaline protease 4×10-4 AU/g leaf),45 ℃,RH 85%,8 h.With the mixed-protease treatment,cigar filler tobacco protein content decreased by 25.38%,its chemical composition was more balanced and its sensory evaluation quality was improved.
