摘要
主食强化是改善微量营养素缺乏的一个有效方法。本文论述了大米强化的国际发展历程和基本技术工艺状况,分析讨论了中国大米的生产、消费以及发展强化大米的必要性和可行性。哥斯达黎加和菲律宾已建立了大米强制强化法规。美国、加拿大、日本和泰国等国家发展自主大米强化。中国已发展了大米强化主要技术工艺,包括喷涂和营养米粒工艺。大米强化不仅可以回补加工中的营养素损失,也可以与面粉等其他主食强化配合共同改善中国的微量营养素营养不良。
Staple food fortification is one of major methods for micronutrient malnutrition control and prevention.This review discussed the history and technology of rice fortification,rice production and consumption and the feasibility in China.Cost Rica and Philippine have established mandatory regulation for rice fortification.United State of America,Canada,Japan and Thailand developed voluntary rice fortification policies.Coating and artificial technologies have been developed in China.Rice fortification can restore the nutrient level which are reduced during processing and contribute to micronutrient malnutrition control and prevention together with fortified flour and other staple food.
