摘要
水稻是中国最主要的粮食作物,提高水稻产量和品质对保证中国粮食安全和社会稳定具有重要意义。蛋白质作为稻米中第二大类贮藏物质,其含量的高低及组成与稻米的营养价值、食味性和产量等都有着密切联系。综述了前人有关水稻蛋白质种类、氨基酸组成及其与产量和品质关系的研究,并分析了生态因子和栽培措施对稻米蛋白质的影响,以期为提高水稻产量,改善稻米品质的研究提供参考。
Rice is one of the most important staple food crops in China.Increasing rice yield and improving grain quality play a very important role of ensuring food security and social stability.Protein is the second largest matter stored in rice grains,and its content and composition have close relations with nutrition value,eating quality and grain yield.This paper reviewed previous studies on protein classification,amino acid composition,relationships between protein content and grain yield and quality in rice.Meanwhile,effects of ecological factors and cultivation techniques on protein were also analyzed in this paper to provide a basis for increasing yield and quality in rice.
