摘要
对HACCP体系在水产养殖中的研究现状及其发展进行了综述,并根据水产养殖流程图,构建我国水产养殖HACCP基本构架,进行危害分析,确定关键控制点,提出有效的监控措施与纠偏措施,旨在促进我国水产养殖行业建立和实施HACCP管理体系。
This paper presents current research status and progress of HACCP system in the aquaculture. Moreover, a HACCP based approach for evaluating the potential hazard in the aquaculture were proposed, and the critical control points (CCPs) were identified. It was suggested that corrective actions should be taken immediately at each CCP, so as to promote the establishment and implementation of the HACCP system in the aquaculture industry in China.
