摘要
研究了酿酒葡萄云中舞(暂定名)干红葡萄酒的相关特性,以玫瑰蜜、法国野、烟73为对照,分别测定酒度、还原糖、总酸、挥发酸、游硫、总硫、pH等常规指标,对功能性成分总酚和原花青素的含量也进行了比较分析,并进行了感官品尝。结果表明,新品种云中舞单酿酒的理化特性符合葡萄酒的国标,总酚和原花青素的含量较高,分别为3 584.44mg/L和72.68mg/mL,酒体呈深宝石红色,果香浓郁,香气典雅,酸涩度平衡,结构性好,酒体较丰满,留香长,后味绵延。表明云中舞干红葡萄酒是饮用品质佳、抗氧化能力比较强的葡萄酒品种,将为云中舞的推广和应用提供理论依据。
Investigate features of the dry red wine from grape 'Cloud Dancer' (an unknow variety-temporally named Cloud Dancer by the company), with the 'Rose Honey', 'French Wild', 'Yah 73' as the control, and measure alcohol, reducing sugar, total acid, volatile acid, free S, total sulfur, pH and other conventional indicators. Also compare functional components of total polyphenols and proanthocyanidins content. And conducte organoleptic evaluation. The results showed that the physical and chemical properties of the single wine from new varietie 'Cloud Dancer' met the national standard, and total polyphenols and proanthocyanidins were higher, respectively, 3584.44 mg/mL and 72.68 mg/mL, the wine shows a deep ruby red wine, fruit rich, elegant aroma, sour degree of balance, good structure, fuller bodied, fragrant long stretches after taste. This showed that the 'Cloud Dancer' red wine was qualified, its antioxidant capacity was relatively strong, which would be the theoretical basis for the promotion and application of 'Cloud Dancer'.
