摘要
主要对火腿肠弹性指标的仪器评价方法进行了研究,并将仪器测试的结果与感官评价结果进行相关性分析。结果表明,火腿肠弹性的感官评定值与TPA测定值存在极显著相关性,可以用TPA仪器测试代替对火腿肠弹性的感官检验。
The instrumental evaluation method of springiness about ham sausage was studied,the correlative analysis between sensory and instrumental measurement indicated that the correlation between sensory evaluation value and TPA parameters of ham sausage was very significant,thus the instrumental method-TPA could be used to instead of sensory to test ham sausage springiness.
