藿香色素的提取及稳定性研究 被引量:3

摘要 以75%的乙醇为提取剂,采用浸提法进行藿香色素提取,并在不同条件下对提取液进行稳定性研究。结果表明:该色素在一定的温度范围内(55℃以下)和弱酸性及中性条件下较稳定;在室温、自然光下稳定;几种金属离子和几种食品添加剂对藿香色素无不良影响;氧化剂对藿香色素影响很大,但还原剂对藿香稳定性无影响。表明该方法具有良好的重复性、可靠性。 With 75% ethanol extraction agents,the pigment in Agastacherugosa(Fisch.etMey.)O.Ktze.was extracted,and the stability of extraction agents in different conditions were studied.The results showed that the pigment in acidic condition was stable,in a certain temperature range(55 degrees below)had stability,and was also stable in the room temperature,natural light.Several metal ions and several food additive pigments had no adverse effects on the pigments,the antioxidant had strong effect on it,but reductant had no effects.So that the method had good reliability and repeatability.
